Made by picking the grapes and freezing them in a blast freezer which turns the water to ice leaving a sugary, concentrated syrup that is then fermented into wine. That process retains good acidity which is needed to balance the high level of sweetness. Sweet but not cloying, thanks to the high level of acidity.
